One Pot Pasta (vegan/vegetarian)

This is a simple, quick meal that gives the illusion that it was a lot of hard work. I love a good meal that doesn't leave me with a huge pile of  dirty dishes to be done.
One pot creamy pasta

  • 4 garlic cloves 1 jar sundried tomatoes (drained)
  • 3 cans (5 ¼ C.) veggie broth 1 lb. uncooked penne pasta
  • 2 C. broccoli florets 2 medium carrots
  • 8 oz. Cream Cheese ¼ tsp salt & ½ tsp pepper

Thinly slice garlic. Place 1Tbs oil from sundried tomatoes into 8 quart pot. Cook on medium heat until golden brown. Add broth; increase heat to high. Cover and bring to a boil. Stir in pasta; cover and simmer until pasta is almost cooked but still firm.

Meanwhile, cut broccoli into florets. Cut carrots. Drain sundried tomatoes. Cut cream cheese to cubes; Soften.

Add cream cheese, and stir until well mixed. Add veggies, salt & pepper. Reduce to medium heat. Cover & cook 5-10 minutes until veggies are tender.

We have made a vegan version of this, using vegan cream cheese.

lil turq rocker

What can $2 buy you? Aside from a bean & cheese burrito from Cazodores. This cute lil kiddy rocker was found at a nearby yard sale for a steal of a deal.

I knew that it needed to be turq'ed. Yeah, that's a real verb (in my land). With a couple spritzes of paint I now have this sweet thang. Now if only I could grow a pair and antique it with the burnt umber acrylic paint. Why is that part so hard?

Organize your hair ties

Do you have hair ties all over the house like I do did?

I could never find a hair tie when I needed one. But they were still scattered all over the house. It seamed I was buying a new pack of elastics every time we went to the store. So next time I was at the store I grabbed a carabiner for a buck instead. I went around the house and filled the whole carabiner up with hair ties (Seriously. It was even more full then the picture below). Now, I can always find a hair tie when I need it. But they are still scattered around the house after they have been used.

Now I need another carabiner for the car...
